Caeser Salad Dressing

Caeser salad dressing with lemon, garlic and peppercorns on the side

The Caesar Salad, renowned for its rich, tangy, and creamy dressing, has been a beloved staple in kitchens around the world.  Caesar Salad Dressing, originally crafted by Italian-American restaurateur Caesar Cardini in the 1920s, has stood the test of time, becoming a versatile and indispensable addition to salads and beyond.

Our Caesar Salad Dressing recipe is designed to capture the essence of Cardini’s creation while offering a modern twist that enhances its versatility and ease of preparation. This dressing harmoniously blends the bold flavors of garlic, anchovies, and worcestershire sauce with the creamy richness of egg yolks and olive oil. The result is a perfectly balanced dressing that elevates any salad from mundane to magnificent.
One of the standout features of our recipe is its simplicity.  With just a few quality ingredients and minimal preparation, you can whip up a batch of this dressing in minutes, ready to transform your salads into gourmet delights.
What sets our Caesar Salad Dressing apart is its adaptability. While it shines as the star of a traditional Caesar Salad, it’s equally at home drizzled over grilled vegetables, used as a marinade for chicken, or even as a dip for fresh crudités. Its rich, savory profile complements a wide array of dishes, making it a versatile staple in your culinary repertoire.

Equipment

  • 1 Food Blender
  • 1 Digital electronic scales

Ingredients

  • 1 Lemon Juiced. Approx 35 ml
  • 2 Medium Egg Yolks
  • 25 ml Worcester Sauce
  • 150 ml Good quality Olive Oil
  • 45 g Olive Oil
  • 3 Anchovy Fillets

Instructions

  • You can put all the ingredients into a bender and blend until incorporated. However, I have found that using this method can make the dressing too thick. If you opt for this easy method, you'll want to whisk in a bit more olive oil to loosen the dressing. OR
  • Put the Garlic, Parmesan & Anchovy fillets into the blender until smooth. Tip that mixture into a bowl, and slowly add the egg, Worcester sauce & olive oil whisking until fully incorporated.
