Dill Pickle Martini

Dill Pickle Martini

The Savoury Trend at Its Most Delicious

Also known as the Pickletini, the Dill Pickle Martini is a blockbuster of flavour and audacity. If you thought the Dirty Martini with olive brine was adventurous, the Dill Pickle Martini is about to blow your mind. The addition of Dill Pickle Brine to the cocktail ingredient list is a game-changer; it takes savoury cocktails to a whole new level. Previously, we had the dirty Martini with olive brine, which is a very sharp, very savoury flavour.
Using Dill Pickle brine is a whole different scenario; yes it is savoury, but it also has a little sweetness that is subtle and not at all ‘in your face’.
I think it is easy to say that the Dill Pickle brine rides along comfortably with the botanicals of gin, but I think it is actually the relationship it has with dry Vermouth that makes this simple variation such a winner. The dry and slightly acidic nature of Dry Vermouth when mixed with Dill Pickle brine is one of those combinations that takes you by surprise; they really are complimenting eachother, and when blended with gin, the combination creates a bold flavour with subtle nuance.

This drink emerged from the pickle brine trend that dominated cocktail culture in 2025 and shows no signs of slowing down in 2026. It’s briny, refreshing, and surprisingly sophisticated. The pickle brine adds a salty, tangy complexity that enhances gin’s botanicals without overwhelming them. The dill provides a herbaceous note that ties everything together. It’s savoury, refreshing, and genuinely delicious—and certainly looks like it is here to stay!
