Cheese and Olive Bites

I haven’t yet decided if this is a good habit or not… but, when I see a recipe I fancy, I’ll either clip it or bookmark it on my phone. As a consequence, I have books of old clippings and loads of bookmarks on my phone I may never see again.
Recently, when going through a box, I came across an old clipping for this recipe, Cheese and Olive Bites by Fadime Tiskaya. We REALLY like this. I’ve prepared Cheese and Olive Bites quite a bit now, and the recipe works perfectly every time and it’s super easy to make. I’ll make half the recipe [about 15 pieces] when our neighbours are over for an aperitif – usually a Vodka Martini, a favourite in our household, and we all usually end up fighting over the last Cheese and Olive Bite; it’s easy to eat the whole batch and not have any room left for dinner, so make the whole recipe when you’re having a room full of guests- perhaps they’ll be a little more civilised and not squabble over the last morsels!!
The Cheese and Olive Bites recipe tick the Superfoods boxes with the olives, sesame seeds and feta cheese, and because Happy Hour should be a happy time, this recipe is definitely a winner with us and our friends.

Cheese and Olive Rolls
Equipment
- 1 Electronic digital scales
- 1 Rolling Pin
- Baking Tray
- Pastry Card optional
- Parchment Paper Optional
Ingredients
- 300 grams Ready Made Puff Pastry
For the filling
- 100 grams feta cheese, crumbled
- 75 grams green olives, strong and very finely chopped
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon chilli pepper
- ½ teaspoon sumac
- ¼ teaspoon nutmeg preferably freshly grated
Instructions
- Preheat the oven to 180 C [350F] gas mark 4. Cover a baking tray with parchment paper [NOTE 1]
- In a bowl, mix together the filling ingredients with a fork
- Roll out the pastry on a lightly floured surface and cut into 3 equal pieces.Along the long edge of one of the pieces, pile a third of the filling in a strip about 1cm [about 1/2 inch] wide, then roll the pastry and filling over to the opposite side, creating a long log. Repeat with the other two pieces of pastry and the remainder filling. Cut each log into 10 - 15 equal pieces
- Transfer them on to the baking tray, sprinkle with sesame seeds and bake for 15 - 25 minutes or until golden.
Notes
- I have made this recipe quite a few times, and I put the oven to 190C fan, for 12-15 minutes.
